Paneer Butter Masala / Shahi Paneer Masala


Ingredients:

Paneer - 250 gms 
Curd /Yogurt -1/4 cup
Milk -1/2 cup
Tomato- 1 big
Onion - 1 big
Ginger - small piece
Green Chilly - 2-3
Cardamom - 3
Garam Masala -1/2 tsp
Red Chilly powder- 1/2 tsp
Tomato Sauce - 2 tsp
Butter or Ghee - 3 tsp
Salt
Coriander leaves






Method:

  • Heat a pan and add 1 1/2 tsp of butter .
  • Add chopped onion, crushed ginger,green chilly and cardamom and fry for 3-4 minutes.
  • Add tomato ,salt and cook covered till it become soft .
  • Add beaten curd and cook again for 5 minutes.
  • Add 1/2 cup water and remove from heat .Allow it to cool.
  • Blend this in a mixer till smooth paste.
  • Heat a pan with remaining butter and add blend gravy into it.
  • Add garam masala, red chilli powder ,tomato sauce.
  • Boil it to get thick gravy.
  • Add milk and paneer and boil 4-5 minutes.
  • When the gravy become thick consistent and paneer is done,remove from heat.
  • Garnish with coriander leaves.

Green peas Potato masala / Aloo Mattar



Ingredients :
Green Peas -  1 cup (half cooked)
Potato - 2
Onion - 1 big
Garlic - 2-3 pods
Ginger - small piece
Green chilly - 1
Tomato - 1
Turmeric powder - 1/4 tsp
Red Chilly powder - 1/2 tsp
Coriander powder - 1 tbsp
Garam masala -1/4- 1/2 tsp
Fennel / Jeerakam- 1/4 tsp
Oil
Salt 
Curry leaves( optional)
Coriander leaves


Method:

  • Heat a pressure cooker add oil .
  • Add crushed ginger,garlic & green chilly. 
  • Add onions, curry leaves and saute well.Add salt .
  • When onions become light brown add turmeric powder,red chilly powder,coriander powder,garam masala and saute well.
  • Add cut tomato .Saute well till oil gets separated.
  • Then add green peas & potato and saute.
  • Add required water and close pressure cooker . 
  • After 2-3 whistle ,wait for the pressure to release.
  • Heat pan ,pour oil and crackle fennel seeds.
  • Pour cooked curry into it .
  • When the curry become thick remove from flame and garnish with coriander leaves.
  • Serve with Chapati ,Naan etc..

Cheera Thoran /Cheera Ularthiyadu / Spinach



Ingredients:

Cheera /Spinach - 1 bunch
Green Chilly - 2
Shallots/ Chuvanulli - 5-6
Garlic pods - 3-4
Grated coconut - 1/4  - 1/2 cup
Turmeric powder - 1/4 tsp
Mustard seeds - 1/4 tsp
Oil
Salt
Curry Leaves

Method :

  • Heat pan and add oil.
  • Splutter mustard seeds. Add crushed  shallots and garlic pods  & saute well.
  • Add curry leaves and length wise cut green chilies.
  • Add turmeric powder.
  • Add grated coconut and salt.
  • Then add finely chopped cheera/ spinach and saute well.
  • Cover it cook for 1-2 minutes.
  • Remove from fire.
  • Serve hot with rice or chapati !!

Mushroom Masala


Ingredients:

Button Mushroom- 250gms
Onion – 1
Green chilly – 1
Garlic -1/2 tbsp
Ginger – ½ tsbp
Red chilli powder – 1 tbsp
Coriander powder – 1 tsp
Turmeric powder- ¼ tsp
Garam Masala – ¼ tsp
Mustard seeds – ½ tsp
Curry leaves
Coriander leaves –for garnish
Salt
Oil

Method:

  • Wash mushroom and cut it into lengthwise.
  • Marinate mushroom with red chili powder, coriander powder, turmeric powder, garam masala, salt and keep it aside for 10 minutes.
  • Heat a pan with oil.
  • Put mustard seeds.
  • Add ginger and garlic paste & green chili.
  • Add onions and sauté well till it become light brown.
  • Add marinated mushrooms and sauté well.
  • Cover it and stir occasionally.
  • Remove from heat when done.
  • Garnish with coriander leaves.
  • Serve with chapatis or rice !!!

Aviyal


Ingredients:

Vegetables – 3 cups, cut lengthwise
Mango- 1 small
Turmeric powder – ¼ tsp
Chili powder- ½ tsp
Coconut – ½ cup
Green chili – 2-3
Jeerakam/Fennel seeds – a pinch
Yogurt – ¼ cup, beaten
Coconut oil
Salt
Curry leaves

Method:

  • Mix vegetables with turmeric powder, chili powder, and coconut oil, salt & curry leaves.
  • Heat a manchatti or heavy bottom pan and cook vegetables.
  • Add little water if required.
  • Grind coconut, jeerakam and green chili into a semi paste.
  • When the vegetables are ¾th cooked, add mango & ground paste. Mix well.
  • Cover and cook till the veggies are done and the raw taste of coconut paste is gone.
  •  Add yogurt and mix well & remove from the gas,
  • add the coconut oil and curry leaves.
  • Serve hot with rice.

Dal /Parippu Curry

Dal /Parippu Curry

Ingredients:

Dal : 1 cup
Turmeric powder :1/4 tsp 
Green chilly : 2
Ginger : Small piece
Garlic : 2 pods
Shallots :4-5
Jeerakam/ Fennel :1/2 tsp
Ghee : 1 tsp (you can add more if required)
Dry Red chillies : 2-3
Salt : as required
Oil : as required
Coriander leaves : for garnishing


Method:

  • Soak dal in water .
  • Cook dal with green chillies slits ,garlic ,turmeric powder with enough water.
  • In a pan put oil and crack jeerakam.
  • Then add shallots (finely chopped).When it turn light brown add red chillies and add cooked dal into it.
  • Add salt.Allow dal to boil.
  • Add ghee when the curry become thick in required consistency .
  • Garnish with coriander leaves.
  • Serve with rice or chapatis,rotis etc

Kaalen





Ingredients:

Curd ( beaten) – 2 cups
Raw plantain /nenthrakkaya – 1

Chena /yam – 1 cup (optional)

Turmeric powder – 1/2 tsp
Pepper - One and a half tsp
Chilli powder – 1/4 teaspoon
Salt – to taste

For Grinding:

Coconut – 1/2 grated
Curd – 1 cup
Jeerakam/Fennel – 1/2 tsp
Green Chillies – 2

For Seasoning

Coconut oil – 1-2 tbsp
Mustard seeds – 1 teaspoon
Uluva – 1 teaspoon
Curry leaves – as required
Dry red chillies – 2 or 3

Preparation:
  • Cut the chena and kaaya into square pieces 
  • Take a mannchatti or pan ,put vegetables with enough water to cook.
  • Add pepper, chilli powder and turmeric powder. Cook till the pieces are cooked well. Keep aside.
  • In a mixer, grind together very finely coconut, jeerakam, and green chillies adding 3/4 cup curd (don't add water).
  • Add this paste to the cooked vegetables.
  • Put this on low heat. Keep stirring till hot, but do not allow it to boil.
  • Add salt and the rest of the curd to this, stirring all the time . Simmer for five minutes or until it thickens and take off heat.
  • Heat oil in a pan. Add mustard. When it pops, add uluva. Add curry leaves and dry red chillies . 
  • Add this to curry.
  • Kaalen is ready for serving !!
